Kiawah Island, Sunday

 

 

 

 

So good. I had Fried Oysters as my first course; BZ had the Catalan Seafood Stew. For entrees, BZ had the sautéed Beeliner Snapper; I the Confit of Pork. And, we delighted in our dessert selections--Goat Cheese Panna Cotta for her; Frozen Lemon Meringue Pie for moi.

Delightful. Great servers. Loved the decor, and the menu. Charleston shines.

Before dinner we drove along the Battery, and gave BZ an overview of the historic area.

Earlier, I beach combed; we lounged around the cottage after a spectacular brunch at The Sanctuary's Jasmine's Porch. And, this morning we slept in, drank coffee, and worked on solving world problems. You're all safer because BZY and MJP are ON THE JOB.

Dinner Tuesday, Breakfast Saturday



You can't beat a quiche for versatility (Except for pizza. Or, pasta. Omelets...) Leftovers would not normally reside this long in our frig, but we had our roadtrip in between.
Our basic quiche recipe is adapted from a Hellman's advertisement in the 1970s. Over the years it's gone many directions as far as variety of fillings. This one is Swiss and Gruyere cheese, turkey, bacon, and green onion.
Tuesday night's salad--Romaine, almonds, dried cranberries, grapes, carrots, with creamy poppyseed dressing--made for a tasty sweet/savoury juxtaposition. And this morning, avocado added a touch of creamy goodness.

Eataly

Today we traveled to Eataly. Not the country but to Eataly, which is fairly new to Chicago. We ended here by default; happily so. Crazy mis-communication took 30 minutes of drive time, so we missed church at 4th Presbyterian.

The plan was to attend church with RvH and CA and then celebrate their birthdays (4/1 and 4/2, respectively) at brunch. Instead we checked-out Eataly, enjoyed croissants and Lavazza coffee, shopped, and bought to-go Paninis--two Figuolas (or something close to that spelling) and a Caprese. They obviously change-up the names as their on-line menu referred to the Caprese as Giulietta.

We loved our experience and brought home some treats (including brown tomatoes!) CA and I later shared the Caprese and fig-gorgonzola-prosciutto Paninis. (RvH chose the fig Panini). Delicioso!

Breakfast for Dinner Tonight

 

 

Family favorite white corn tortillas. Fresh Market and other specialty stores.
 

Tortillas lightly brown in hot oil in just seconds. Drain on paper towels.

Just stir fresh spinach into roasted potatoes fresh from the oven.

 
Add a bit of grated cheese to the scrambled eggs.
 

 

Assemble and garnish with salsa, hot sauce, guacamole, and/or sour cream.

 

Started with this recipe from Magnolia Days. Decided to add fresh spinach, and serve with cheese-scrambled eggs and white corn tortillas. Then a bit of Sriracha sauce.

Peanutbutter-Nutella Banana Buttermilk Pancakes

With appropriate cudos to callmemikeg on Instagram and his website, I bumped this up a notch by adding Nutella, and chopped hazelnuts instead of peanuts.
Ingredients:
 
Hungry Jack Complete Buttermilk Pancake mix
Hazelnuts, toasted and rough chopped
Nutella, warmed
Creamy peanut butter, warmed
Bananas
 
Assembly:
Mix pancake batter. (I find this always requires more water than suggested.)
Grill pancakes to preferred size
Stack two or three high
Spread Nutella on toppancake
Slice bananas and artfully arrange
Drizzle with peanut butter
Scatter roasted, chopped hazelnuts
