ITALIAN SAUSAGE WITH POTATOES, ONIONS AND PEPPERS

2 large Sweet onions, quartered
8-10 small Potatoes, unpeeled and quartered
2 large Bell Peppers, cut into wide strips
Olive oil
Salt and Pepper; Red Pepper Flakes optional
1. Preheat oven to 375°.
2. Arrange sausage pieces, onions, bell peppers and potatoes in a foil-lined jelly roll pan so they are in a single layer, but close together.
3. Drizzle with olive oil, and sprinkle generously with salt and pepper. If desired, sprinkle with red pepper flakes.
4. Bake until potatoes are tender and beginning to brown; onions and peppers will be slightly carmelized. 50-60 minutes.
NOTES:
Quantities can be varied depending on how many people you’re serving, and I many times overload the baking pan—baking up to 1-1/2 hours.
Serve with a baguette and butter.
This is a great casual meal if you arrange on a large platter and place in the center of the table, allowing guests to serve themselves.
